Simple Spiced Omelette

Coriander is known for its antimicrobial benefits. Turmeric boosts the body’s anti-inflammatory qualities and liver support. The protein in the eggs is beneficial for gut healing. Eating sauerkraut help to repopulate the gut with good bacteria.
Ingredients:
2 eggs
1/4 tsp ground turmeric
2 tsp lime juice
1 Tbsp. chopped coriander
2 tsp coconut oil
1 spring onion
Sea salt and ground black pepper
Sauerkraut or kimchi to serve
Method:
Melt the coconut oil in a pan over medium-high heat.
Beat the eggs and turmeric and season to taste with sea salt and ground black pepper.
Pour the eggs into the hot pan.
Scatter coriander over, then, using a spatula, fold omelette over to form a semi-circle.
Turn and cook for 30 seconds or until just set.
Transfer to a plate, garnish with coriander and spring onion and serve.
